THE IMPORTANCE OF PROPERLY STORING ESSENTIAL OILS

The shelf life, quality, beneficial properties, and safe use of an Essential Oil depends largely on the way in which it is stored. When kept in the proper vessel and at the proper temperature, an Essential Oil can achieve its maximum shelf life with a conservative estimate of at least one year. On the more liberal end of the scale, properly cared-for Essential Oils may even last for ten years or longer, depending on the type of oil and the storage conditions

DO ESSENTIAL OILS EXPIRE?

Eventually, all Essential Oils will expire and become unsafe to use, thus correct storage and appropriate handling are advantageous to all oils. The quality of an oil begins to progressively decline with the process of oxidation, which causes them to lose their aromas as well as their nourishing benefits. On a more encouraging note, Essential Oils do not all degrade at the same rate; while Essential Oils from citrus fruits are known to oxidize faster than all others – expiring and losing their scents and benefits as early as six months after being opened – Essential Oils with earthy or woody aromas, such as Patchouli and Sandalwood, tend to smell even better with maturity, taking much longer before beginning to weaken in potency and aroma; thus an oil’s lifespan may fluctuate greatly depending on the quality of the source botanical and the harvest, the extraction method and the conditions under which the oil is distilled, the batch/lot, storage and handling of the oil when it is first received by both the supplier and the customer, and the manner in which the supplier bottles, stores, and handles the oil.

HOW CAN YOU TELL IF ESSENTIAL OILS HAVE GONE BAD? WHAT DOES EXPIRED OIL SMELL AND LOOK LIKE?


There are four main ways to tell if an Essential Oil has deteriorated:
1) Its aroma has become stronger and likely unpleasant or it has weakened, depending on the oil
2) It has changed in color and has become darker, lighter, or even colorless, depending on the oil
3) It appears murky/foggy
4) It has thickened in consistency
There might be times when an oxidized Essential Oil will not exhibit the classic signs of deterioration, thus these are general guidelines. For this reason, it is strongly recommended that all oils be properly stored, handled, and used before they expire.

CAN YOU STORE ESSENTIAL OILS IN THE REFRIGERATOR?

Yes, Essential Oils can be stored in the refrigerator. This option is especially ideal for those who use their oils infrequently – for example, a couple of times a year.

CAN YOU STORE ESSENTIAL OILS IN THE FREEZER? IS IT ACCEPTABLE FOR ESSENTIAL OILS TO FREEZE?

Yes, Essential Oils may be stored in the freezer. If they freeze or form crystals that cause its appearance to become foggy, simply allow them to naturally return to room temperature before using them. The time it takes to “thaw” will depend on the oil and can range from minutes to several hours. Some crystallized oils can begin to liquify as the bottle is held in the hand and others may benefit from a warm water “bath” (placing the bottle in a bowl of shallow warm water). Whichever method is used, ensure that the bottle’s cap is kept on loosely, otherwise the valuable volatile constituents will quickly escape. If there is too little headspace in the bottle and the cap is left on tightly during heating, the Essential Oil will build up pressure in the bottle and, when the cap is removed, the oil will spray all over. Leaving the cap loosely on the bottle will help prevent this.

PLACES WHERE ESSENTIAL OILS SHOULD NOT BE STORED

Do not store Essential Oils in hot, bright, or humid areas, such as in the bathroom, near a stove, on a window sill or other sunny area, and any places where constantly shifting room temperatures might potentially cause the quality of the oil to deteriorate faster.

WHICH FACTORS INFLUENCE AN OIL’S SHELF LIFE?

HEAT
Due to their flammable nature, Essential Oils should never be kept near open flames or any sources of heat or fire, such as sunlight, candles, and stoves. Leaving them vulnerable to high temperatures could lead to them reaching their unique flash points, which are the individual temperatures at which oils will ignite. Being frequently exposed often to heat will hasten an oil’s deterioration.
OXYGEN
When oils are exposed to air/oxygen, they become oxidized and their volatile constituents begin to fade, which means their fragrances – among other qualities – fade. This is largely caused by the oil’s bottle cap being left open for long periods of time. To prevent or slow the processes of oxidation and evaporation, it is important that bottles remain capped when Essential Oils are not in use. Oxidized oils, while not suggested for topical use or aromatherapy, can still be used for other applications, such as household cleaning.
LIGHT
When Essential Oils are kept in sunlit areas, their properties will be negatively impacted, and these include their aromas, appearances, and general effectiveness. For this reason, Essential Oils are sold and stored in darkly-colored bottles (most commonly amber, although dark blue, green, violet, and black have also become popular) to prevent UV radiation from penetrating the bottle. Regardless of the dark color of the bottle, it is still best to avoid placing oils in direct sunlight, as the recurrent heating and cooling will facilitate the oils’ oxidation.
MOISTURE
Moisture can enter oil bottles when they are left uncapped for an extended period, leaving the oils looking cloudy. The insides of the bottles will also form water beads. To reiterate, this can be prevented by keeping bottles capped.

HOW TO PROLONG SHELF LIFE AND KEEP TRACK OF OIL FRESHNESS

  1. Follow the oil company’s SDS documents or product pages, which outline handling and storage conditions.
  2. Do not store Essential Oils in direct sunlight; store them in cool, ambient areas.
  3. Prevent oxidation by displacing any oxygen in a bottle’s “head space” with Nitrogen, an inert gas that is heavier than oxygen and that does not react with any Essential Oil constituents.
  4. Make note of the date on which you buy an Essential Oil. This date can be marked on the product itself, either on the label or on the cap.
  5. Do not keep undiluted Essential Oils in dropper bottles, as the rubber will become gummy and spoil the quality of the oil.
  6. Ensure that the bottle cap is always screwed on tightly.
  7. Aim to keep Essential Oil bottles as full as possible; any empty space or “headspace” in the bottle is filled with oxygen, which can speed up the oxidation process. If necessary, transfer the oil into smaller containers that will be fuller.
  8. Do not insert any objects directly into the bottle; first, pour the necessary amount into/onto sterilized equipment, dilute, then apply as preferred.

Everyone has their own variant of homemade chocolate icing/frosting. A Little more butter, little less, powdered sugar, egg whites, chocolate chocolate and more chocolate! If I’ve tried ten I’ve tried hundreds and while they all share commonalities they are all unique.

Delicious Chocolate Icing

The truth is an icing should be creamy and spreadable, it should hold it shape and while it doesn’t need to stand up to much heat you don’t want your icing sliding off your cake, or worse have the layers of your cake slide off. Have you ever seen that? It’s something you’ll never repeat (unless you like an edible mess)!
If on the other hand your chocolate frosting is too thick it will make it hard to spread and can end up tearing your cake as you apply it and that’s not fun at all. A stiff icing has its uses though for items like brownies or cookies.
If you are faced with a little too thick of icing add a splash of milk to it and it should loosen it enough for application. While it’s definitely not the best place to repair such an idea go slow when adding extra ingredients at the end.

Chocolate Frosting for Brownies

The lack of any extra liquid in this recipe makes it quick and easy but thick and stiff enough to be used as a topping for brownies or cookies as well as cakes. Using melted chocolate also gives this icing a rich flavor and a deep dark color.
  • 6 Tbls. Soft Butter
  • 1 & 1/2 Cup Powdered Sugar
  • 1 oz. Semi-Sweet Chocolate
  1. Beat butter till light and fluffy
  2. Blend in the powdered sugar
  3. Add cooled melted chocolate, beating till well blended

Traditional Chocolate Icing

This is a very traditional chocolate icing recipe. By traditional I mean very old. It’s important to give the first step plenty of time.
The complete blending of the butter and cocoa is vital to the quality of the final product. The fact that it uses all butter does create minor holding problems when the icing is on the cake. It must be refrigerated till used, and served as soon as possible after being cut.
Working with an all butter icing also means that while frosting the cake it may be necessary to return the cake and the icing to the refrigerator frequently throughout the process.
The end result will be a light soft, versatile icing with a delicate chocolate flavor that will enhance any cake.
  • 10 oz. Soft Butter
  • 1 1/4 lb. Powdered Sugar
  • 8-10 Tbls Cocoa
  • 1 Cup Milk
  • 1 Tbls. Vanilla
  1. Beat butter and cocoa till fluffy
  2. Gradually add half of the sugar, beating till smooth
  3. Add remaining sugar alternately with milk beating well after each addition
  4. Stir in vanilla, mixing to spreading consistency

You must achieve one thread consistency of sugar syrup which can be tested by touching the syrup between your forefinger and thumb. A thin string should be formed and should not break. If the string breaks, allow the sugar syrup to simmer for some more time.
Milk powder and cocoa powder are the important ingredients that go into the making of homemade chocolate recipe. I must mention that using good quality butter and cocoa powder is imperative. A chef once told me that margarine works best but I have not used it for health reasons. You can add different flavors like chocolate essence, vanilla essence, cinnamon or espresso. I have not added any nuts or any other flavors. Nuts like crushed pistachios, pecans or almonds make for a good choice. Alternately, you can roll the finished homemade chocolate in desiccated coconut or colored sprinkles.

Ingredients

  •   Cocoa powder 5 tbsps
  •   Milk powder 1 1/4 cups
  •   Butter 1/4 cup
  •   Sugar 2/3 cup
  •   Water 1/2 cup

Method for making Homemade chocolate

  1. Sieve milk powder and cocoa powder and keep aside.
  2. Heat water and sugar in a vessel and bring to a boil. Reduce flame and continue cooking till the syrup reaches one string consistency. Add the butter and mix well till it melts and blends with the syrup. Turn off heat.
  3. Add the cocoa-milk powder mixture gradually (a few tbsps at a time) and mix well till glossy. Grease square pan or plate. Pour the mixture into the pan and smooth the top with a spatula allow to set for 10 to 15 mts at room temperature.
  4. Place in fridge for 10-15 mts. Remove from fridge and use a cookie cutter to cut into desired shape.

Just like cooking, brewing green tea means that you have to pay attention. Green tea leaves are delicate and can burn just like foods do. Green tea should not be steeped for more than 2 minutes. Start by brewing a new green tea blend for 1 minute. Taste after every 30 seconds to find a flavor that works for you. Tea becomes increasingly bitter the longer it is steeped. If you prefer light flavor, steep the tea for shorter amounts of time.

Be Mindful Of Water Temperature

When you cook a meal, you usually set the stovetop or oven to a certain temperature. Tea brewing is exactly the same. Green tea should generally be brewed at temperatures between 150F and 180F. Japanese green teas should be brewed at lower temperatures—typically 150 to 170 F. Chinese green teas are hardier and should be brewed between 170 and 180 F.
The best way to control water temperature is to use a tea kettle with built-in temperature controls. If you don't have one, simply boil water in a pot on the stove. Remove the boiling water from heat and let it sit for 1 or 2 minutes.
Alternatively, 150 F is reached when small bubbles start forming on the bottom of the pot. 170 F is when midsize bubbles start rising to the surface. These guidelines are for sea level and can change at different altitudes. You can always toss in a regular baking thermometer to check temperature if you're heating the water on the stove top.

Flavoring Add-Ins

For some people, the earthy or grassy flavor of green tea alone isn't a treat. Luckily, you can add in a few subtle flavorings to make this tea taste better. What Is Nilgiri Tea?

Nilgiri tea is an Indian black tea that is similar to Assam tea and Darjeeling tea. This black tea does not have strong notes of astringency and it brews into a bright amber hue. The tea has an aftertaste that is nutty and spicy.

Nilgiri Tea History

Nilgiri tea is cultivated in the Nilgiri district of India, which can be found in the state of Tamil Nadu. Also known as the blue mountains, the Nilgiri Mountains belong to the Western Ghats mountain range which spans more than 140,000 square kilometers crossing Kerala, Karnataka, Goa, and Gujarat in south India. The mountain range parallels the western coast of southern India. The Nilgiri Mountains feature more than 24 peaks towering 2,000 meters above sea level.
The rich natural area is home to dozens of unique flora and fauna, which has made the Nilgiri District a popular travel destination. The climate and soil composition also make it one of the best tea growing regions on the planet. While lesser known than other Indian tea producing regions such as Darjeeling and Assam, the Nilgiri tea region still produces some of the highest quality black teas.
Tea production began in the Nilgiri region during the rule of the British East India Company around 1835. Classic British tea estates and tea plantations popped up around the district from Ketti to Dunsandle and Thiashola. The highest Nilgiri tea plantations are located in Korakundah. The aromatic fragrance and strong fruity flavors were an instant hit with Westerners. 
Today, small local growers — mainly a local community of agriculturists known as Badagas — produce the vast majority of Nilgiri tea. Larger tea plantations that are part of the Nilgiri Planters' Association, which is headquartered in Coonoor, produce about 30 percent of this type of tea. In addition, the region produces a wide range of white tea, green tea, and oolong tea.

Nilgiri Tea Production

Nilgiri tea is made from the leaves of the true tea plant known as Camellia sinensis. This Indian black tea is typically harvested between January and March. Teas harvested early in the season are known as Frost Tea and feature a rosy, sweet flavor. These teas are typically harvested early in the morning after a light frost and come from tea plantations higher in the mountains.
Once the leaves are plucked, they undergo an oxidation process using the Orthodox Method where enzymes in the leaves are exposed to oxygen. This process is usually undertaken by hand to preserve the entire tea leaf. This causes the leaves to turn a dark brown or black hue and produces an intense, flavorful aroma. 
Once dry, the tea leaves are gently rolled and shaped for sale as loose leaf teas. These types of Nilgiri tea are known as orange pekoe — a medium grade tea, or pekoe black — a premium grade fine tea made with only the youngest buds and tea leaves.
There are also lower quality Nilgiri teas that typically end up in the form of tea bags. These teas are generally produced using the CTC (crush, tear, and curl) Method. This method involves the use of machinery to bruise and break the leaves into smaller fragments. 

How to Brew Nilgiri Black Tea

Nilgiri tea is easy to brew using just a few simple tools. It can be brewed as hot tea or iced tea. It's also popularly used in chai recipes thanks to its balanced flavor profile. 
  1. Heat water between 203 and 212 degrees Fahrenheit in an electric teapot or in a pan on the stove.
  2. Add one teaspoon of Nilgiri organic black tea leaves for every eight ounces of water to a tea strainer.
  3. Pour the hot water in your teacup and place the tea strainer inside. 
  4. Steep the tea for 3 to 5 minutes. The longer the steeping time, the stronger the flavor will be.
