Everyone has their own variant of homemade chocolate icing/frosting. A Little more butter, little less, powdered sugar, egg whites, chocolate chocolate and more chocolate! If I’ve tried ten I’ve tried hundreds and while they all share commonalities they are all unique.

Delicious Chocolate Icing

The truth is an icing should be creamy and spreadable, it should hold it shape and while it doesn’t need to stand up to much heat you don’t want your icing sliding off your cake, or worse have the layers of your cake slide off. Have you ever seen that? It’s something you’ll never repeat (unless you like an edible mess)!
If on the other hand your chocolate frosting is too thick it will make it hard to spread and can end up tearing your cake as you apply it and that’s not fun at all. A stiff icing has its uses though for items like brownies or cookies.
If you are faced with a little too thick of icing add a splash of milk to it and it should loosen it enough for application. While it’s definitely not the best place to repair such an idea go slow when adding extra ingredients at the end.

Chocolate Frosting for Brownies

The lack of any extra liquid in this recipe makes it quick and easy but thick and stiff enough to be used as a topping for brownies or cookies as well as cakes. Using melted chocolate also gives this icing a rich flavor and a deep dark color.
  • 6 Tbls. Soft Butter
  • 1 & 1/2 Cup Powdered Sugar
  • 1 oz. Semi-Sweet Chocolate
  1. Beat butter till light and fluffy
  2. Blend in the powdered sugar
  3. Add cooled melted chocolate, beating till well blended

Traditional Chocolate Icing

This is a very traditional chocolate icing recipe. By traditional I mean very old. It’s important to give the first step plenty of time.
The complete blending of the butter and cocoa is vital to the quality of the final product. The fact that it uses all butter does create minor holding problems when the icing is on the cake. It must be refrigerated till used, and served as soon as possible after being cut.
Working with an all butter icing also means that while frosting the cake it may be necessary to return the cake and the icing to the refrigerator frequently throughout the process.
The end result will be a light soft, versatile icing with a delicate chocolate flavor that will enhance any cake.
  • 10 oz. Soft Butter
  • 1 1/4 lb. Powdered Sugar
  • 8-10 Tbls Cocoa
  • 1 Cup Milk
  • 1 Tbls. Vanilla
  1. Beat butter and cocoa till fluffy
  2. Gradually add half of the sugar, beating till smooth
  3. Add remaining sugar alternately with milk beating well after each addition
  4. Stir in vanilla, mixing to spreading consistency

The secret to making that perfect homemade chocolate that will give any store bought chocolate a run for its money is in preparing the sugar syrup to one string consistency. It is very very crucial to the making of a successful batch of homemade chocolate. You must achieve one thread consistency of sugar syrup which can be tested by touching the syrup between your forefinger and thumb. A thin string should be formed and should not break. If the string breaks, allow the sugar syrup to simmer for some more time.
Milk powder and cocoa powder are the important ingredients that go into the making of homemade chocolate recipe. I must mention that using good quality butter and cocoa powder is imperative. A chef once told me that margarine works best but I have not used it for health reasons. You can add different flavors like chocolate essence, vanilla essence, cinnamon or espresso. I have not added any nuts or any other flavors. Nuts like crushed pistachios, pecans or almonds make for a good choice. Alternately, you can roll the finished homemade chocolate in desiccated coconut or colored sprinkles.

Ingredients

  •   Cocoa powder 5 tbsps
  •   Milk powder 1 1/4 cups
  •   Butter 1/4 cup
  •   Sugar 2/3 cup
  •   Water 1/2 cup

Method for making Homemade chocolate

  1. Sieve milk powder and cocoa powder and keep aside.
  2. Heat water and sugar in a vessel and bring to a boil. Reduce flame and continue cooking till the syrup reaches one string consistency. Add the butter and mix well till it melts and blends with the syrup. Turn off heat.
  3. Add the cocoa-milk powder mixture gradually (a few tbsps at a time) and mix well till glossy. Grease square pan or plate. Pour the mixture into the pan and smooth the top with a spatula allow to set for 10 to 15 mts at room temperature.
  4. Place in fridge for 10-15 mts. Remove from fridge and use a cookie cutter to cut into desired shape.

Just like cooking, brewing green tea means that you have to pay attention. Green tea leaves are delicate and can burn just like foods do. Green tea should not be steeped for more than 2 minutes. Start by brewing a new green tea blend for 1 minute. Taste after every 30 seconds to find a flavor that works for you. Tea becomes increasingly bitter the longer it is steeped. If you prefer light flavor, steep the tea for shorter amounts of time.

Be Mindful Of Water Temperature

When you cook a meal, you usually set the stovetop or oven to a certain temperature. Tea brewing is exactly the same. Green tea should generally be brewed at temperatures between 150F and 180F. Japanese green teas should be brewed at lower temperatures—typically 150 to 170 F. Chinese green teas are hardier and should be brewed between 170 and 180 F.
The best way to control water temperature is to use a tea kettle with built-in temperature controls. If you don't have one, simply boil water in a pot on the stove. Remove the boiling water from heat and let it sit for 1 or 2 minutes.
Alternatively, 150 F is reached when small bubbles start forming on the bottom of the pot. 170 F is when midsize bubbles start rising to the surface. These guidelines are for sea level and can change at different altitudes. You can always toss in a regular baking thermometer to check temperature if you're heating the water on the stove top.

Flavoring Add-Ins

For some people, the earthy or grassy flavor of green tea alone isn't a treat. Luckily, you can add in a few subtle flavorings to make this tea taste better. What Is Nilgiri Tea?

Nilgiri tea is an Indian black tea that is similar to Assam tea and Darjeeling tea. The tea has bold fruity and floral flavors  — with hints of dusk orchid and woody plums — that are balanced in a mild body. This black tea does not have strong notes of astringency and it brews into a bright amber hue. The tea has an aftertaste that is nutty and spicy.

Nilgiri Tea History

Nilgiri tea is cultivated in the Nilgiri district of India, which can be found in the state of Tamil Nadu. Also known as the blue mountains, the Nilgiri Mountains belong to the Western Ghats mountain range which spans more than 140,000 square kilometers crossing Kerala, Karnataka, Goa, and Gujarat in south India. The mountain range parallels the western coast of southern India. The Nilgiri Mountains feature more than 24 peaks towering 2,000 meters above sea level.
The rich natural area is home to dozens of unique flora and fauna, which has made the Nilgiri District a popular travel destination. The climate and soil composition also make it one of the best tea growing regions on the planet. While lesser known than other Indian tea producing regions such as Darjeeling and Assam, the Nilgiri tea region still produces some of the highest quality black teas.
Tea production began in the Nilgiri region during the rule of the British East India Company around 1835. Classic British tea estates and tea plantations popped up around the district from Ketti to Dunsandle and Thiashola. The highest Nilgiri tea plantations are located in Korakundah. The aromatic fragrance and strong fruity flavors were an instant hit with Westerners. 
Today, small local growers — mainly a local community of agriculturists known as Badagas — produce the vast majority of Nilgiri tea. Larger tea plantations that are part of the Nilgiri Planters' Association, which is headquartered in Coonoor, produce about 30 percent of this type of tea. In addition, the region produces a wide range of white tea, green tea, and oolong tea.

Nilgiri Tea Production

Nilgiri tea is made from the leaves of the true tea plant known as Camellia sinensis. This Indian black tea is typically harvested between January and March. Teas harvested early in the season are known as Frost Tea and feature a rosy, sweet flavor. These teas are typically harvested early in the morning after a light frost and come from tea plantations higher in the mountains.
Once the leaves are plucked, they undergo an oxidation process using the Orthodox Method where enzymes in the leaves are exposed to oxygen. This process is usually undertaken by hand to preserve the entire tea leaf. This causes the leaves to turn a dark brown or black hue and produces an intense, flavorful aroma. 
Once dry, the tea leaves are gently rolled and shaped for sale as loose leaf teas. These types of Nilgiri tea are known as orange pekoe — a medium grade tea, or pekoe black — a premium grade fine tea made with only the youngest buds and tea leaves.
There are also lower quality Nilgiri teas that typically end up in the form of tea bags. These teas are generally produced using the CTC (crush, tear, and curl) Method. This method involves the use of machinery to bruise and break the leaves into smaller fragments. 

How to Brew Nilgiri Black Tea

Nilgiri tea is easy to brew using just a few simple tools. It can be brewed as hot tea or iced tea. It's also popularly used in chai recipes thanks to its balanced flavor profile. 
  1. Heat water between 203 and 212 degrees Fahrenheit in an electric teapot or in a pan on the stove.
  2. Add one teaspoon of Nilgiri organic black tea leaves for every eight ounces of water to a tea strainer.
  3. Pour the hot water in your teacup and place the tea strainer inside. 
  4. Steep the tea for 3 to 5 minutes. The longer the steeping time, the stronger the flavor will be.
  5. Remove the tea infuser and enjoy your cup of tea. Sweeten as desired with sugar or honey.

Body spray: Add 5-10 drops to four ounces of water and use as a fragrant body spray.
Itchy scalp: Add lavender, cedarwood or basil essential oil to shampoo to reduce itching.
Thicken hair: Add rosemary to shampoo to naturally thicken hair and increase volume
Strengthen nails: Mix 10 drops of frankincense, myrrh and lemon essential oils into two tablespoons of vitamin E oil, then rub on cuticles.
Reduce wrinkles: Mix 3-5 drops of sandalwood, geranium, lavender and frankincense essential oils with an unscented lotion and apply to face. Avoid applying to eyes.

Improve sleep: Lavender oil can alleviate insomnia. Sprinkle a few drops on your pillow to help you fall asleep.
Massage therapy: Use a few drops of cedarwood or lavender oil, mixed with an unscented lotion during a relaxation massage.
Immediate relaxation: Apply 2-4 drops of chamomile, lavender and peppermint essential oil to your temples for a cooling effect and immediate relaxation.
Body butter lotion: Mix coconut oil, shea butter, magnesium oil and essential oils for moisturizing body lotion.
Homemade lip balm: Combine coconut oil, beeswax and lavender oil for an amazing healing balm for chapped lips.
Relieve tension: Help to relieve anxiety by using a single drop of lavender oil on your hands, rub together, and cup your hands to your nose and let the smell flood your senses.

Detox bath: Mix lavender oil, epsom salts and sea salt to a warm bath to cleanse and rejuvenate the body.
Improve depression: To boost mood and relieve depression, add rose oil to baths, inhalations and diffusers to improve mood.
Mint chocolate cocoa: Add 2-3 drops of peppermint oil to hot cocoa for instant minty chocolate!
Sauna therapy: Add two drops of your favorite essential oil into two cups of water in a sauna.
Calm upset child: Help sooth and calm children by adding lavender or chamomile to their stuffed animals.
Foot bath: Add a few drops of lemon or eucalyptus oil to a large bowl of warm water to help soothe the feet.
 

Essential Oils Uses for Cleaning

All-purpose cleaner: Add three drops each of lemon oil and tea tree oil to a few ounces of warm water, then spray countertops to naturally disinfect.
Natural mosquito repellent: Combine one drop each of lemongrass oil, citronella oil and eucalyptus oil with one teaspoon of coconut oil to make natural bug spray and rub on exposed skin. Reapply as needed.
Sports gear: If your kids play sports, add two drops each of tea tree oil and lemon essential oil to one quart of warm water; next add four tablespoons of baking soda and mix. Use to clean ripe (!) jerseys, cleats and sports gear.
Clean air: Diffuse cinnamon essential oil in the air and enjoy its anti-microbial properties.
Homemade peppermint patties: Use peppermint oil, coconut oil, dark chocolate and raw honey to make real peppermint treats.
Washing machine: Add 10-20 drops of your favorite scent per load.
Vacuum cleaner: Add 5-10 drops of your favorite oil in your vacuum bag or dust container.
Homemade sunscreen: Mix coconut oil, zinc oxide, shea butter, helichrysum oil and lavender essential oil, then store in a squeeze bottle to make homemade toxic-free sunscreen.
Eliminate shower curtain scum: Using a 16-ounce spray bottle, use four drops of eucalyptus essential oil and four drops of tea tree oil (melaleuca) with warm water; spray onto your shower for natural mold killing action.
Clean burnt pans: Use a few drops of lemon oil and some boiling water to help remove burnt food from pots and pans.
Wonderful smelling home: Diffuse clove, rosemary and orange essential oils when guests come over, and they will talk about how amazing your house smells.
